Locals prepare it with mackerel, which is dried in the sun and then grilled over charcoal — a true island delicacy.

2# Chickpeas slow-cooked in clay: The Sunday classic
Prepared in a skountavlos (a traditional clay pot), this dish is placed in the wood-fired oven on Saturday night and left to simmer gently until Sunday morning.

3# Every kind of “keftedes”!
People of Paros love turning everything into fritters: chickpeas, greens, zucchini, tomatoes, cheese and of course, minced meat.

4# Delicious Parian pies
Enjoy cheese pies, myzithra pies, zucchini pies, kolopia (small pies filled with greens) and fragrant fennel pies.
